And in fact, this version of salt bread stays crispier for longer. Traditional salt bread relies on steam or spraying water to get that signature crackling crust, but there's a big problem with this method: the bread doesn't stay crispy for long. So, today, I’m sharing my improved version of Shio Pan that uses a specific rice flour glaze and a unique flour blend to keep the crust crisp for longer, combined with Tangzhong and Poolish for an incredibly soft interior.
